Gluten Free Almond and Lemon Cake

I've been experimenting with variations of my Gluten Free Cake recipe over the past few weeks and recently discovered xanthan gum, which makes an amazing difference to the texture of the cake.
My recipe for Gluten Free Almond and Lemon Cake was completely accidental, all because of a shopping error, thought i was buying vanilla extract. Only realize my mistake when I was measuring it out and wondered why it was a bit thicker. I had bought french almond extract instead. But, it was a welcome error! The cake was tasty, so the next time I decided to add a packet of ground almonds and use less flour. The result was truly delicious. I've made it a few more times since, trying out different quantities of xanthan gum. I use between one and two level teaspoons, either way the results are just as delicious, just the texture is different each time. The reactions from friends at work was amazing, especially when they discovered it was gluten free.
Preheat oven Gas Mark 6 and grease a 22cm diameter cake tin. I use a springform cake tin. 

Cream together 8oz Stork Margarine and 7oz Caster Sugar in a Large Bowl. 
Beat together 3 Medium Eggs, 3 Tsp French Almond Extract and 1 Tsp Vanilla Extract. 
Add to bowl whisking until smooth. 
Grate the Rind of 1 large Lemon and squeeze 5 Tbls Lemon Juice into the bowl and give it a good stir. 
Add 100g Ground Almonds and mix in.
Sieve in 6oz Doves Farm Gluten Free Self Raising Flour with 1 level Tsp Xanthan Gum
Stir until mixture is smooth but sloppy. 
Put mixture into greased cake tin and bake in the centre of the oven for 40 minutes. 
Leave to cool and enjoy the aroma.
Make a runny icing using lemon juice, drizzle and spread over the cooled cake.




Enjoy with a cup of tea, yum!

  4. That does look very nice - I've never used xanthar gum either. I'm definitely going to give this a go.

    The pressie's do make a nice change from bills and has been a lovely way to get to know other bloggers. If you've not tried a swap before I'd definitely recommend :) x
